Look for
The temperature of the room, the shape of the glass chosen for you, the colour of the wine as it's poured. Your experience begins before the first sip.
Sommelier's tip: Arrive with a clean palate. Avoid strong coffee or perfume before your tasting for the most honest impressions.
The Eye
Hold the glass against a white background and tilt it slightly. The wine's robe — its colour, depth, and brilliance — reveals age, grape variety, and winemaking style before you've even raised it to your nose.
Look for
Clarity and brightness, the gradient from centre to rim, the legs or tears that form on the glass — each detail speaks of viscosity and alcohol content.
Sommelier's tip: A brick-orange rim on a red wine often signals maturity. Pale straw in a white can suggest youth and freshness.
The Nose
Bring the glass to your nose without swirling first — capture the delicate primary aromas. Then swirl gently and inhale again. A world of secondary and tertiary notes emerges: fermentation character, oak influence, evolution.
Look for
Fruit, floral, spice, earth, mineral. Identify whether aromas are fresh or evolved, subtle or intense. There are no wrong answers — only your palate's truth.
Sommelier's tip: Short, repeated sniffs are more effective than one long inhale. Your olfactory receptors adapt quickly — pause and return.
The Palate
Take a small sip and let the wine coat your entire mouth. Feel the structure — the interplay of acidity, tannin, alcohol, and body. Notice how flavours arrive, evolve, and resolve across your palate in real time.
Look for
Sweetness on the tip, acidity on the sides, tannins drying the gums, warmth in the throat. Is the wine balanced? Does it feel light, medium, or full-bodied?
Sommelier's tip: Draw a small amount of air through the wine while it's in your mouth. This "retronasal" technique reveals hidden layers of flavour.
The Finish
After swallowing, the wine's story continues. Great wines have a long finish — flavours that linger, evolve, and sometimes surprise. This is where quality truly reveals itself, in the echoes left behind on your palate.
Look for
How long the flavour persists, counted in seconds. Does it change or stay constant? Do new notes emerge? A long, complex finish is the hallmark of a truly great wine.
Sommelier's tip: Keep a small notebook. Jotting immediate impressions helps train your palate and creates a personal wine vocabulary over time.
